4 Lb red-skinned potatoes
2 tsp salt

Peel and quarter potatoes.
Put them in a pot,
pour in cold water to come just
above the potatoes. Add salt, stir, and cover.
Set on
high heat on top of the stove. Bring to a boil.
Reduce heat to med-low. Move the cover a little to the
side to vent. Boil for 15-20 minutes until potatoes are
very tender when pierced with a knife.
Drain in a colander, and return to the pot.
